Polish Hill Riesling is an outstanding example of this Australian classic. It has fragrant, floral aromas with hints of lime and lemon essence, is vibrant and juicy on the palate with a squeeze of tangy lime juice and distinctive minerality. As ever, the structure is tight and the wine is characteristically lean and steely with crisp, piercing acidity. There is also a touch of lime towards the end of that long, bone dry finish. The Polish Hill has more obvious weight, richness and concentration of flavour, is more generous now than usual and with minerality that lingers in a fashion rarely seen in rieslings outside Europe. Drink now to fifteen years.

Since its inception, Domaine de Trévallon has been a trailblazer for quality wine production in the South of France. Near the town of Saint Etienne de Grès, Domain de Trévallon is located within the appellation of Les Beaux de Provence. Owner and winemaker Eloi Dürrbach planted his first 3 hectares of vines in 1973 and produced his first vintage of Domaine de Trévallon in 1977. In 1993 local authorities changed the regulations for grape production in the appellation of Les Beaux de Provence, lowering the permitted percentage of Cabernet Sauvignon to 20%. Domaine de Trévallon?s red is always a blend of 50% Syrah and 50% Cabernet Sauvignon. Refusing to change his style, Eloi opted to produce his wine as a Vin de Pays (Vin de Pays des Bouches du Rhône). By doing so Domaine de Trévallon, like todays "super-tuscans", was among the first wineries to choose to go outside local appellation rules to produce higher quality wines.

Château Climens is the leading property in Barsac and produces one of the greatest sweet wines in Bordeaux. It can trace its history back to the 16th century and was bought by Lucien Lurton in 1971. It has been owned and managed by Berenice Lurton since 1992. Climens is located in the south of the Barsac appellation, just outside the small village of La Pinesse - the vineyards lie on the highest point in Barsac on a gravel/sand topsoil and a limestone/clay subsoil. Yields at Climems are tightly restricted and the wine is barrel-fermented and then aged in small oak barriques (one third new) for 22 months. If d`Yquem is the epitome of power and concentration, then Climens is the epitome of delicacy, finesse and complexity. The wines from the best vintages can last for up to 50 years. Climens is classified as a Sauternes 1er Cru Classé

The 2004 blend is comprised of 85% Cabernet Sauvignon, 8% Cabernet Franc, and 7% Petit Verdot. No Merlot was used in the blend this year. The 2004 vintage is deep red in color, with an intense nose of vanilla, black currants and cedar. The elegant integration of the tannins and fruit is noticed immediately. Flavors of warm mulled spices on the mid-palate complement the balanced and complex structure. The long, aromatic finish exhibits notes of leather and cardamom. The wine is charming and fragrant, and will age gracefully. It is recommended that this wine be decanted prior to serving, to allow it to develop its full potential. This is especially important when serving young Dominus wines.
